This Week for Dinner: September 4-10


As summer turns into fall, I’m really looking forward to a lot of fun recipes, new and old- comfort foods and soups, bonfires and hot chocolate. I’ve planned this week’s menu around this “in-between time”…

Sunday Dinner-Tony Roma’s Baked Potato Soup and Steak Bruschetta

I make this soup a few times each year-it’s almost like eating a loaded baked potato-in a bowl, and is a fantastic knockoff of a great restaurant recipe.

Another fun Pinterest find, this looks amazingly gooey, chewy and yummy. I made a large pot of black beans last night and can’t wait to make these!

I’ve put this on the menu a few times now, and have never gotten around to it. I had to make this during a week we have Cory- I think the whole idea of waffles for dinner is lost on my dear husband…


Heart-healthy Dinner- Grilled Mahi Mahi with Corn & Black Bean Salsa

I’ve only had mahi mahi a few times, but it was delicious. This recipe fit in perfectly with my black-bean theme. Of course, the last time I had mahi mahi, I was on a beach in the Caribbean…I’m hoping the “Ohio Whole Foods version” doesn’t disappoint :)


A Recipe using Fresh Salsa- Philly Cheesesteak Tacos

Fresh salsa from the garden only comes around once a year, and I like to eat as much of it as I can while it’s super fresh. After one too many ground beef taco and fajita nights, I’ve found this recipe to put a fresh spin on Mexican night.


And I came across this while looking for this menu…



It’s a Philly Cheesesteak. Wrapped in a pizza. And it’s called a Philly Taco-not exactly what I was going for-but about ten years ago I probably would have loved it!
